We’re beyond excited to add Tattersall Barreled Rum to our family of spirits and liqueurs. Just 14 barrels were produced for the first batch and we made an extremely limited amount available for distribution. Some barrels have been reserved for our cocktail room, select restaurants and bars, and others will continue to age.

Since each barrel is unique and produces a subtly different flavor profile, the team at South Lyndale Liquors joined us at the distillery to sample the rum and select the perfect barrel. The result is a truly one-of-a-kind rum that you can only get from South Lyndale.

The Process

To understand what makes our Barreled Rum stand out, you have to know a little bit about our Blackstrap Rum first. It starts when we distill fermented blackstrap and fancy molasses (made from Louisiana and Florida cane sugar) into Blackstrap Rum. We use molasses instead of sugar to give it a rich, smoky taste reminiscent of Caribbean pot rums.

That’s when the Bourbon barrels come in. We age the Blackstrap Rum at 130 proof in freshly-dumped, 53-gallon Kentucky Bourbon barrels for just under one year. As the rum rests, the Bourbon barrels help break down the raw, smoky backbone of the blackstrap molasses and highlight soft notes of caramel, vanilla and banana. Over time, the oak from the barrels mute the rum’s funkier notes, leading to rich rounded flavors and a beautiful caramel color — we never add coloring or sugar.

After South Lyndale selected their barrel, we lightly filtered the rum and cut it to 114 proof before we bottled it. At this proof, it’s an incredible sipping rum and can hold its own in a wide range of cocktails. It’s not only perfect for your tiki drink, it’s just as delicious in an Old Fashioned or Negroni. Give it a try, you’ll love it.
